Dried Pear, Rocket and Prosciutto Pizza with Balsamic glaze

Nothing beats pizza…except maybe a dried fruit pizza!

We’ve teamed up with The Good Roots to create this delicious Dried Pear, Rocket, and Prosciutto Pizza with Balsamic glaze.

Serve this to your family on a Friday night as the ultimate feel-good comfort food.

Ingredients

Pizza

  • 1  prepared pizza base
  • 2 tbsps tomato paste
  • 1 cup mozzarella cheese, grated
  • 4-5 slices prosciutto (or cooked bacon)
  • 3 Dried pears, chopped  
  • 3 tbsps goats cheese, crumbled ( gorgonzola or feta)
  • 8-10 fresh rocket leaves
  • 4-5 roasted walnuts, roughly chopped
  • Black pepper and salt to taste

Balsamic Glaze

  • 1/2 cup balsamic vinegar  
  • 1/4 cup brown sugar  

Directions

  1. Balsamic Glaze: In a small saucepan bring the balsamic vinegar and brown sugar to a simmer and turn down the heat and continue to stir occasionally until reduced to about half and thicker consistency. Take off the stovetop and let it cool down completely.
  2. Pizza: Preheat the oven to 200 C . Place a baking tray inside the oven to heat up as well.  
  3. Spread the tomato paste evenly on the prepared pizza base then add the mozzarella cheese and prosciutto on top.  
  4. Place on the preheated baking tray and bake in the oven for 5-8min until all the cheese has melted.  
  5. Once out of the oven and still hot, crumble the goat’s cheese over the pizza. Then add the pieces of dried pear, rocket, walnuts, salt, and pepper.
  6. Drizzle with balsamic glaze before serving or serve on the side.
