Delicious Dried Apple Muffins

Dried apples are not only delicious but also packed with nutrients. They are rich in dietary fiber, which supports digestive health, and a good source of antioxidants that help protect your cells. Historically, drying apples has been a preservation method used for centuries, allowing people to enjoy the fruit year-round, long after the harvest season. Add them to your muffins for a naturally sweet, chewy, and nutritious boost.

Ingredients

Muffins

  • 1 ¾ cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 2 eggs
  • ½ cup non-fat Greek yogurt
  • ½ cup no sugar added applesauce
  • 2 tsp vanilla extract
  • 1 cup Crispy Green Freeze-Dried Apples approximately 3 single serving packages. Crushed or pulsed in food processor
  • ¼ cup light brown sugar
  • ¼ cup milk I used 2%
  • ½ cup extra virgin olive oil you can also use canola oil
  • 1 cup apples peeled and diced into ¼ in cubes

Crumble Topping

  • 2 tbsp cold butter
  • ¼ cup flour
  • 2 tbsp light brown sugar
  • ½ tsp cinnamon
  • ¼ cup Crispy Green Freeze-Dried Apples approximately one single serving package. Use food processor to crush.

Optional Cream Cheese Frosting

  • 2 oz light cream cheese
  • ½ tbsp butter
  • 2 tbsp milk I used 2%
  • 2 tbsp sugar
  • 2 tbsp Crispy Green Freeze-Dried Apples approximately ½ single serving package. Use food processor to crush.

Directions

  • Preheat oven to 425°F.
  • Spray muffin pans with nonstick spray or line with cupcake liners. You will need two pans as this recipe makes 15 muffins.

Crumb topping

  • Mix ingredients together in a medium bowl. Using a fork (or your hands if needed!), mix well until butter is smaller pieces. Set aside.

Muffins

  • Whisk the flour, baking soda, baking powder, cinnamon, and salt together in a large bowl or the bowl for your mixer.
  • Add all the remaining ingredients EXCEPT the diced apple.
  • Mix well.
  • Mix until no flour pockets remain.
  • Fold in the apples.
  • Spoon the apple batter evenly into each cup, filling each all the way to the top.
  • Spoon crumb topping on each muffin, gently pressing it down so it sticks.
  • Bake for 5 minutes at 425° then, keeping the muffins in the oven, reduce the oven temperature to 350°F.
  • Bake for an additional 15 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool before enjoying.
